Dice and rinse enough red potatoes to fill bottom of baking dish.
Chop 2 small yellow onions finely. Add to potatoes.
Poor on a generous amount of olive oil and toss with seasonings.
Season potatoes with Jonny seasoning, (or sea salt) and pepper.
Sprinkle with about 1 Tablespoon Basil and 1 Tablespoon oregano.
Crush and add 2-3 cloves fresh garlic, or sprinkle with garlic powder.
Set aside (or microwave*)
Chop 4 skinless chicken breasts and fry until lightly brownd in olive oil and a little bit of garlic. Season lightly with sea salt. (Don't let chicken get to dry)
Add chicken to potatoes and toss together.
Cover tightly with foil and bake in a 375 degree oven until potatoes are soft ( probablly around 45 min.)
* Quick method is to partially cook potato mixture in microwave then stick in oven.
